what we ate: hummus, avocado, beans & tomato on toast

tasty, quick little snack for connor and myself:
- toast
- garlic hummus (1 tbsp)
- avocado (1 tbsp)
- sautéed cherry tomatoes (3)
- sautéed garbanzo beans (about 1-2 tablespoons)
- sprinkle of parsley
- dash of salt and pepper
and for all you calorie counters out there, this mini vegan meal was 208 calories with those measurements (according to my Lose It! app) nothing but nutrient packed calories. nom nom nom
have a great day! i’m off to sneak in a little nap of my own while theses kiddos are dreaming…
